Cream Pasta with Peas
2 kilos of tortellini
1 pound of frozen peas
1 cup heavy whipping cream
3 tablespoons of butter
2 tablespoons of extra virgin olive oil
1 cup of grated Parmesan cheese
2 tablespoons of black pepper
Extra pasta water
In a saucepan, fill with water
Bring to a boil, add the peas and simmer slightly for about 10 minutes
Then add the tortellini and cook another 4-5 minutes but check the package, I used Rana fresh
Get a coffee mug or heat-resistant bowl
Reserve some of the pasta water
In a separate saucepan large enough for peas and pasta
Add the EVO oil
Over medium-low heat for a few minutes
Add the cream, Parmesan and pepper, stir in for a few more minutes
Add tortellini and peas
Stir again, if it is too thick, add a little water from the pasta kept aside
If you want, sprinkle a little more Parmesan and eat

8 ounces fresh pea pods (frozen of course are fine to use)
Enough broccoli florets for two
8 ounces of chopped bacon

Fusilli with hazelnut, pasta asparagus and speck
(for 3 servings)
350 g of fusilli
100 g of toasted hazelnuts
70 g of Parmesan cheese
10g of extra virgin olive oil
30 ml of milk
250 g of asparagus
100 g of speck
1 clove of garlic
Evo oil as required
Salt to taste
Pepper to taste
Chopped hazelnuts to taste
put the toasted hazelnuts, Parmesan cheese, olive oil, milk, salt, pepper in a bowl and blend.
Brown the speck in a pan until it becomes crisp and then set it aside.
In the same pan, brown the garlic clove in 2 tablespoons of oil. Then add the asparagus (previously boiled for 5 minutes) together with the salt and pepper.
Add the fusilli (cooked al dente), pesto and a little water from the pasta for creaminess. Mix well. Finally add the crispy speck and mix. Serve with a sprinkling of chopped hazelnuts!
